Banana Cupcakes with Maple Syrup Buttercream Frosting
One of my darling nephews is sick of the girly swirly cupcakes and requested a more manly cupcake instead of my usual pink, floral creations. His particular penchant for banana cake made a banana cupcake and obvious choice. This is a Banana Cupcake with Maple Syrup Buttercream and topped with Caramelised Banana Disks created just for him. The Buttercream is made with real Canadian maple syrup whipped through it and then topped off with small disks of banana caramelised in butter and cinnmon sugar. A small sprinkle of caramel coloured sugar crystals finishes off this rich and velvety (and manly) cupcake great for a function dessert or just a wicked treat.
